6 N.J. restaurants join composting program

April 20 -- Six Collingswood, N.J., restaurants are adding food composting to their to-do lists.

Restaurants Bistro DiMarino, Casona, DiBartolo Bakery, El Sitio Grill & Café, Sapori and Villa Barone will take part in Organic Diversion’s "Farm-to-Fork-to-Farm" composting program.

The company will help the restaurants maintain their composting programs by analyzing their habits and devising a customized operations and training manual, according to a news release.

Organic Diversion is based in Marlton, N.J.

"While our clients are very enthused about the idea of preserving the planet, they also find our restaurant program reduces disposal costs," President Rocco D´Antonio said in statement. "Up to 75 percent of the waste coming out of restaurants is recyclable, making our program the most efficient waste management solution for our clients."
