The Disturbing Vegetable Crisis No One’s Talking About

"Eat your veggies. They're good for you."

That's what our parents and grandparents have always told us.

But that may no longer be true ... unless you have what I call "special crop insurance" for your vegetables. (More about that in a minute.)

The facts are alarming: the veggies (and fruits) of generations past were far more nutrient dense than the ones we eat today. Between 1950 and 1999, according to a landmark University of Texas study, essential nutrients in 43 different plant foods took a nosedive. The minerals that were reviewed are the biggies, the ones we depend upon to stay healthy and prevent disease. Minerals like calcium ... potassium ... iron ... and more.

When the researchers saw the results, at first they couldn't believe it. It couldn't possibly be right. Or could it? They checked and rechecked the data ... and sure enough, to their consternation, it was true. Other organizations, skeptical of these results, conducted their own studies.

What all the researchers found was very disturbing.

Today's conventional spinach contains 85% less magnesium and 37% less iron than spinach grown 40 years ago.
Between 1975 and 1997 ... just 22 years ... calcium dropped by 27% in a dozen different fresh vegetables. Iron levels dropped 37%. And magnesium - an essential mineral that performs over 300 important functions in the body - is down 85%. (That means you're only getting 15% of what you used to. You'd have to eat six or seven times the amount of veggies to get the same amount of magnesium compared to two generations ago!)

And those are just the biggies. What about all the trace minerals that, although needed in just tiny amounts, are every bit as important to good health? Minerals like copper, manganese, molybdenum, selenium, zinc, and more?

They aren't in your food. Not like they used to be.

And that's a big problem ... because while you can certainly take supplements, experts uniformly agree that the minerals that occur naturally in foods are better assimilated than minerals in a pill.

Today's modern industrial agricultural techniques are the culprit. Current farming methods take far more out of the soil than is ever put back in. Thus, the soil itself is starved. Plants can't take up soil minerals that don't exist.

The fact is many of today's so-called "healthy" vegetables are little more than nutrient-poor cellulose tissue with a little bit of color and flavor.

As Franklin Delano Roosevelt said, "The nation that destroys its soil, destroys itself." We have destroyed much of our soil, and we are destroying ourselves. Autoimmune disorders are skyrocketing. Chronic diseases like diabetes and heart disease continue to climb. In the war on cancer, cancer is winning. Depression, anxiety, and other mood and mental health disorders abound. (And that's just the tip of the iceberg.)

All the pharmaceutical drugs in the world have done little, if anything, to reduce the explosion of chronic diseases in the U.S.

Why not?

Because no pharmaceutical drug can replace the minerals that we once got from the soil.

Minerals interact with brain and cellular chemistry in far more ways than we ever imagined. Get enough of them, and you'll lead a very different life than if you're deprived.

For instance:

  • Studies show that when prisoners are given more minerals and vitamins, the incidents of violence are dramatically curtailed. (In fact, if you're well-nourished, you're far less likely to end up in prison or commit criminal acts in the first place.)
  • Researchers have shown that sufficient magnesium can almost magically banish anxiety. (Anxiety disorders are pervasive in today's culture. How much calmer would we all be if we were getting enough magnesium-rich vegetables in our diet?)
  • Numerous studies demonstrate that, if you get enough of the mineral calcium along with vitamin D, your risk of cancer plummets. (I don't know anyone whose life hasn't been touched by a loved one with cancer, do you?)

We just can't count anymore on vegetables and fruits to provide many of the essential minerals we need for healthy brains and bodies. The modern practice of using NPK fertilizers does nothing to correct the problem ... because it contains only two minerals, not the dozens that we need.
